Beef satay was the very first Thai food Chef John ever tasted, and it was literally love at first bite. Ah, that sweet, spicy, salty, smoky, and slightly funky bite… he remembers it like it was yesterday.

Satay is a dish of seasoned, skewered and grilled meat, served with a sauce. Satay may consist of diced or sliced chicken, goat, mutton, beef, pork, fish, other meats, or tofu. These are assembled on your favourite skewers and grilled or barbecued over a wood or charcoal fire, then served with various spicy seasonings.

This recipe will work on just about any meat, but beef is a favorite.

If you look around the produce aisle at your town’s best (meaning most expensive) produce store, you should find some lemongrass stalks. Also sold are tubes of pure lemongrass paste online, in case that’s a better option. Some say you can get away with some lime and/or lemon zest and juice.
